PINEAPPLE-CHICKEN KABOBS WITH QUINOA
Serves 4
Make a colorful summer dinner with these easy kabobs served on a bed of fluffy lemony quinoa with pine nuts and parsley. The sweetness of grilled pineapple pairs well with grilled chicken and a simple honey-mustard sauce.

Ingredients
1/2 cup quinoa
1/4 cup chopped fresh parsley leaves
2 tablespoons toasted pine nuts
1/4 teaspoon grated lemon zest
1/4 teaspoon sea salt
1/4 cup Dijon mustard
2 tablespoons honey
1 tablespoon lemon juice
1/4 teaspoon ground black pepper
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1/2 pineapple, peeled, cored and cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
16 cherry tomatoes
8 (12-inch) metal or wooden skewers

Method
Rinse quinoa in a fine sieve until water runs clear, then drain and transfer to a medium pot. Add 1 cup water and bring to a boil. Cover, reduce heat to medium low and simmer until water is absorbed, 15 to 20 minutes. Set aside off the heat for 5 minutes; uncover and fluff with a fork. Stir in parsley, pine nuts, lemon zest and salt.

Prepare a grill for medium heat grilling. In a small bowl, whisk together mustard, honey, lemon juice and pepper. Thread chicken, pineapple, pepper and tomatoes onto skewers. Remove 1 tablespoon honey-mustard mixture and brush skewers with it. Grill, turning occasionally, until chicken is cooked through and vegetables are tender, 12 to 14 minutes. Arrange skewers on a platter over quinoa and serve with remaining honey mustard on the side for dipping.

~ Meat Free Vegetarian/Vegan Recipes ~

PORTOBELLO AND PINEAPPLE TERIYAKI VEGGIE BURGERS:
Serves 4

This method uses leftover pineapple juice from a can of pineapple to make a simple teriyaki sauce.

Ingredients
4 (5-inch) portobello mushrooms, stemmed
1 (20-ounce) can pineapple rings, juice reserved
3 tablespoons soy sauce or wheat-free tamari
2 tablespoons light brown sugar
1 tablespoon finely chopped garlic
1 tablespoon grated ginger
1 tablespoon toasted sesame oil
Canola oil
1/4 cup water
1 tablespoon cornstarch
4 whole wheat hamburger buns, toasted
Green or red leaf lettuce

Method
Using a small spoon, delicately scoop out and discard the dark brown gills from the underside of each mushroom. Wipe mushrooms gently with a moist paper towel to remove any remaining debris then transfer to a wide, shallow baking dish along with the pineapple rings.
Put 3/4 cup of the reserved pineapple juice (save remaining for another use), soy sauce, sugar, garlic, ginger and sesame oil into a small bowl and whisk together to make a marinade. Pour marinade over mushrooms and pineapple, cover and set aside, turning occasionally, for 1 to 2 hours.
Grease grill grates with canola oil and preheat to medium high heat. Meanwhile, drain leftover marinade from mushrooms and pineapple and transfer to a small saucepan; bring to a boil over medium high heat. In a small bowl, stir together water and cornstarch then whisk into marinade and boil until thickened, about 1 minute more; set aside.
Working in batches, grill mushrooms and pineapple, gently flipping once, until hot throughout and tender, 3 to 5 minutes. Transfer to buns, top with lettuce and serve with teriyaki sauce on the side, if you like.

GRILLED VEGETABLE PIZZA

Serves 4 to 6
Grilled veggies topped with feta and herbs and baked on a cornmeal crust make for a quick, light meal. Feel free to use leftover grilled vegetables for this recipe. Rely on the season to guide you; choose what is at the peak of harvest to create your own custom pizza. Eggplant, bell peppers and fennel, for instance, could replace or add to the vegetables suggested here.

Ingredients
2 cups small broccoli florets
2 cups thinly sliced zucchini
8 thin slices red onion
1/4 cup vinaigrette dressing
2 medium heirloom tomatoes, thinly sliced
2 (8- to 9-inch) frozen cornmeal or other pizza crusts, thawed
Pepper to taste
1/2 pound crumbled feta cheese
2 tablespoons mixed chopped herbs (such as basil, rosemary and oregano)

Method
Heat a grill. In a grilling basket, grill the broccoli, zucchini, and onions, brushing with vinaigrette dressing and turning often, until just tender.

Meanwhile, preheat the oven to 425°F. Arrange tomatoes on the pizza crusts, then arrange grilled veggies on top of the tomatoes. Season with pepper. Mix the feta cheese with the fresh herbs and sprinkle mixture over the vegetables. Bake until cheese is browned and vegetables are crisp, 15 to 20 minutes. Transfer to a cutting board, cut into slices and serve.

Nutrition

CORN ON THE COB WITH FETA AND HERBS
Serves 6
Feta and fresh herbs mixed into butter make a fantastic topping for summer corn on the cob.

Ingredients
1/4 cup crumbled feta
3 tablespoons unsalted butter, softened
Zest of 1 lemon
3 tablespoons chopped mint
2 1/2 teaspoons chopped thyme
1/2 teaspoon fine sea salt
1/2 teaspoon ground black pepper
6 ears sweet corn

Method
In a small bowl, combine feta, butter, zest, mint, thyme, salt and pepper. Use a wooden spoon to stir and mash ingredients together until mixed and fairly smooth. Pack mixture into a ramekin or small bowl and smooth the top. (You can cover and refrigerate the mixture up to 1 day ahead, but make sure to have it warm enough to spread easily before serving.)

Boil or grill corn until tender; serve immediately with butter for spreading.

VEGAN PESTO
Makes about 2 cups
The nutritional yeast in this rich, vibrant green pesto lends a flavor similar to that of parmesan cheese in traditional pesto. Serve over pasta, whole grains, or steamed or grilled veggies.

Ingredients
1/2 cup pine nuts
1/2 cup walnuts
2 to 4 cloves garlic, roughly chopped
4 packed cups basil leaves
5 teaspoons mellow white miso
3/4 cup silken tofu
2 tablespoons nutritional yeast
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper

Method
Pulse pine nuts and walnuts in a food processor until finely chopped. Add garlic and pulse a few more times to blend. Add basil in batches, pulsing after each addition. Add miso, tofu, yeast, salt and pepper and pulse again until creamy and well combined. Chill until ready to use.

Hey Dolls!
As I posted yesterday Kpop 4minute’s HyunA, who’s ready to release her debut solo album on July 5th titled "Bubble Pop!‘ has released a beautiful sweet ballad track titled, “A Bitter Day”.
Just a few days ahead of her album's release, this song features labelmates Junhyung and G.NA.
“A Bitter Day” features a beautiful live acoustic sound which goes so nicely with HyunA’s rhythmical rapping. B2ST’s Junhyung & G.NA sound lovely too but I would have liked to hear more HyunA in this song, I don't not feel as if there is enough of HyunA's singing in it, as G.NA is heard more in the song. I adore G.NA but I was disappointed to not hear much HyunA. :(
HyunA's singing/rapping skills in the beginning of this song "A Bitter Day" from the little she is heard on the song, is very breathtaking that's why I would have liked to hear more of her on this song.

Check the song out below and remember to support HyunA by purchasing her BRAND NEW DEBUT SOLO ALBUM ON... July 5th!

Hey Everyone!
So I recently spotted this interesting post on Shape.com & I thought it would be great to share it will all you!
They were talking about "Junk Food That's Good For You", so these are foods that are actually somewhat beneficial to your health, which are usually known as “junk foods.” So the listed foods all have surprise health benefits!

Here are few of my favorites that I read:
Blue M&Ms: Yes! I was interested in this one because I have NEVER heard it before & found it to be very interesting! Apparently the blue food dye that coats these addicting treats (ingredient also in Gatorade) “could be helpful in reducing damage caused by spine injuries” Also the scientists behind this claim did a study with the blue dye, called Brilliant Blue, and it sped up recovery and ability to walk.
Butter: Butter has become a bad word for many diet-conscious folks, but it has redeeming qualities. Studies actually show that the fat in butter helps our bodies better absorb vitamins, like vitamins A, D, E, and K. So let this creamy, rich toast-topper back into your life! Opt for whipped butter to save on calories without sacrificing taste.
Hot Sauce: In addition to boosting flavor in everything from eggs to burritos, hot sauce may also help you lose wight. It contains capsaicin, a compound that can curb your appetite by reducing levels of the hunger-causing hormone ghrelin and by raising levels of GLP-1, an appetite-suppressing hormone, according to a study published in the European Journal of Nutrition.
Red Wine: Most of us know that red wine's good for your heart, but did you know that the alcohol in wine and other boozy beverages is linked with lower levels of belly fat, when consumed in moderation? Researchers at the University of Buffalo found that men who drink a couple of drinks a day have lower levels of abdominal fat than those who down more drinks in one sitting but do so only once or twice every 2 weeks. For the most beneficial varietal, opt for Pinot noir, which contains more disease-fighting antioxidants than any other type of alcoholic beverage.
Popcorn: Though it's low in calories. it's east to imagine that puffy, white popcorn's low in nutrition, as well. However, this movie snack is full of fiber and has high levels of polyphenols, antioxidants that can protect against heart disease and certain cancers.
In fact, research shows that popcorn has the highest polyphenol level of all snack foods.
Coconut: I thought coconut was very healthy for you? What you've heard is true: Coconut contains saturated fat. However, the tropical treat actually appears to have heart-healthy effects, since 50 percent of its saturated-fat content is lauric acid, which boosts good cholesterol levels. Coconut's also a very good source of manganese. Have a small handful of the shredded, unsweetened variety as a snack or use it in baking.
Dark Chocolate: If you choose dark chocolate, you'll be loading up on flavonoids, the heart-healthy compounds also found in red wine and green tea. So go ahead and indulge! A 1.5 ounce dark chocolate bar (the size of a KitKat Bar—all four pieces) will run you about 200 calories; it provides 2 grams of protein, too.
Sour Cream: Savory sour cream is surprisingly low in sodium. And if you want to top your chili or baked potato with a couple of tablespoons of sour cream (yes, we’re talking about the full-fat variety) you’ll add just 52 calories and only around 2 grams of saturated fat—less than you'd get from drinking a 12-ounce glass of 2 percent reduced-fat milk.
Ketchup: Since it's made from cooked tomatoes, ketchup is loaded with lycopene, a powerful antioxidant that can lower your risk for cardiovascular disease. While all ketchup is a great source of this super substance, a study published in the Journal of Agricultural and Food Chemistry found that organic ketchup contains up to 60 percent more lycopene per gram than conventional brands.

Be sure to keep in mind that these are all mostly considered "Junk Foods" so eat them in moderation.
But now when your eating these goodies, you don’t have to think of them as 100% bad for you as they all have little beneficial advantages for your health!
